Drying process: Patio dry, then Raised bed drying

Tasting notes: Intense Pineapple and star fruit, yellow jam, intense cinnamon and cardamom. Bright citric acidity and residual menthol like mint. Intense body.

This coffee comes to us from Sara Gutierrez, a family friend of mine. She is a 5th generation coffee grower located in Buenavista, Quindio Colombia. She has been experimenting with new processes and technologies to introduce to her family farm and this is one of them.
Our own head of Operations and processing in Colombia, Dayan, first clued us in on this new protocol in 2023 he was co-developing with Sara that was consistently developing a flavor profile of pineapple and mint.
They have since refined the protocol and are able to consistently get juicy and sweetness that reminds you of fresh pineapple. We have had success with medium-dark to dark roasts to pull out tastes like a grilled pineapple.
