This coffee comes to us from Sara Gutierrez, a family friend of mine. She is a 5th generation coffee grower located in Buenavista, Quindio Colombia. She has been experimenting with new processes and technologies to introduce to her family farm and this is one of them.
This is one of Sara’s new protocols she has been working on and is ready for prime time in 2024. She’s dedicated a small quantity from her coffee harvest of Spring 2024 to run through this protocol to develop this consistent flavor profile. She’s combining the Honey process of producing coffee, and introducing into the fermentation process the mosto of a Geisha varietal. This is adding a wider range of flavors and getting some higher points on acidity and body to an already delicious honey-process coffee.
This is the first time this coffee will be introduced to the American market. We are really excited to get your feedback and let Sara know how she did with this new protocol. In Colombia it scored extremely well and she has a very limited amount of this coffee she can make.
